Ingredients

2 cups
almond flour
90 grams
butter, softened
1 teaspoon
Vanilla extract

Method

Pre heat oven to 180°C and line a baking tray with parchment paper
Cream butter and sweetener. Add in almond flour and vanilla and knead until you get a smooth dough – it will be
dense and a little crumbly, but will stick together when pressed)
Roll the dough until it is approximately 1cm thick and cut into little rectangles
Prick the short bread with a fork
Bake for 12 minutes or until golden
